In the event you need to override all instances of the "Organization Name" on your Order Schedule templates, and cannot use the "User" setting to derive it from the Opportunity Owner, you can use the Company Name input on the Template.
This will override the Company Name in the following areas:
- Prepared By
- Footer
- Signature Blocks
Browse to your template, and find the "Language" subtab. Enter your text in the "Company Name" input and Save.
